In all cases the best preparations are made with selected fruits and picked at maturity ... we can say that on this point, our craftsmen are very demanding. Adapt to nature and not vice versa, to use what nature offers us according to the season. It is the project of these craftsmen and we share so much this philosophy!
Throughout the year we will accompany these producers in the seasonality of their products and quantity as well. There will not be for everyone...
We went to Aiguillon, a small flower-filled village at the foot of the Pyrenees. Welcomed by Fabrice: we stayed half a day on site and were able to attend the preparation of several recipes that are now on sale in our shop such as onion confit or jam Pineapple Rosemary.

This onion confit harvested in a neighboring commune, is prepared and simmered with great attention to obtain this beautiful balance. Rich in flavor, it will accompany our foie gras Lebasque farm.
Sown in the spring and harvested in the autumn, red onions have less variety and are produced to a lesser extent ... but have no less tastes. Let the onion do you good! Rich in vitamins A, B and especially C, it is full of minerals and trace elements. A real concentration of vitality!
